CURRY MASALA OR CURRY MASALA RECIPE

This is an Indian masala recipe, Curry masala in made in two types. Curry masala powder and curry masala paste.

This is a garam masala powder. Use this curry masala powder or garam masala powder in curries, fries, dals and dishes.

Sprinkle a tea spoon of curry masala powder on cuisines at the end of cooking. It give a good taste to the cuisines.

Curry masala paste is an instant paste. Use curry masala paste in dishes as early as possible after it made.

INDIAN RECIPES,

CURRY MASALA PASTE OR CURRY PASTE

For 500 grams of vegetables

Ingredients for Indian recipes, curry masala, curry paste

1. Poppy seeds – 2 table spoons

2. Coriander seeds – 2 table spoons

3. Cumin seeds – 1 tea spoon

4. Cloves – 6

5. Green cardamoms – 8

6. Cinnamon stick – 1 cm piece

7. Ginger pieces – 2 table spoons

8. Garlic cloves – 6 – 8

9. Red chillies – 5

10. Onion pieces – 1/2 cup ( 200 ml cup )

11. Water – as needed

Wash the things for Indian recipes, curry masala, curry masala paste, curry paste

1. Wash and clean the ginger and onions.

2. Remove the stalks of onions and peel them.

3. Chop them into small pieces.

4. Peel the ginger and cut it into small cubes.

5. Peel the garlic cloves.

6. Remove the stalks of dry red chillies.

Grind the things for Indian recipes, curry masala, curry paste

1. Take the poppy seeds, coriander seeds, cumin seeds, cloves, dry red chillies, cinnamon stick and green cardamoms in a blender.

2. Grind them to a fine powder.

Add ginger for Indian recipes, curry masala, curry paste

1. Add ginger pieces and garlic cloves to the blender.

2. Grind them to a coarse paste.

Add onions for Indian recipes, curry masala, curry masala paste

1. Then add the pieces of onions and a little water ( 5 – 10 ml water ) to the same blender.

2. Grind them to a smooth paste.

3. Transfer the paste to a bowl.

4. Now curry masala paste or curry paste is ready to use.

How to use curry masala paste

1. Heat a pan with oil, add green chillies and onion pieces.

2. Saute them well until the colour of them changes slightly.

3. Then add mixed red chilli powder and salt. Sprinkle 10 ml of water.

4. Now add curry masala paste.

5. Stir them well continuously until it leaves oil.

6. Cook them until the raw smell of curry masala paste disappears.

7. Then add 80% cooked vegetable pieces and mix them well.

8. Cook them for some time and add two table spoons of grated coconut.

9. Mix them well. Cook them for 3 – 5 minutes.

10. Switch off the stove and serve the masala curry with hot rice, roti and chapati.

How to make curry masala

1. Take the poppy seeds, coriander seeds, cumin seeds, cloves, dry red chillies, cinnamon stick and green cardamoms in a jar of mixie. Grind them to a smooth powder.

2. Add ginger and garlic cloves to the powder, Grind them to a coarse paste.

3. Add the pieces of onions and a little water to the mixture. Grind them to a smooth paste.

4. Transfer it to a bowl. Now curry masala paste is ready to use.

CURRY MASALA POWDER OR CURRY POWDER

For one kilogram of vegetables

Ingredients for curry masala or curry masala powder

1. Coriander seeds – 2 table spoons

2. Cumin seeds – 1 table spoon

3. Cloves – 4

4. Green cardamoms – 6

5. Cinnamon stick – 1 cm piece

6. Star anise – 1 leave

7. Nutmeg – 1/2 cm cube

GARAM MASALA

Method for curry masala or masala powder

1. Dry roast the ingredients one by one in a heated pan. Transfer them to a plate. Cool them.

2. Take coriander seeds, cumin seeds, cloves, green cardamoms, cinnamon stick, star anise piece and nutmeg piece in a blender.

Grind the things for Indian recipes, curry masala or curry masala powder, curry powder

1. Grind them to a fine powder. Sieve them to get smooth powder.

2. Now curry masala powder is ready to use.

3. Transfer the curry powder to a bowl and use it.

Sprinkle the curry msala powder at the end of cooking. Add curry masala powder to curry and cook it for three minutes. Then switch off the stove and serve the curry.

CURRY POWDER

Mixed red chilli powder or curry powder

Ingredients for curry chilli powder

1. Red chilli powder – 250 grams

2. Coriander seeds – 25 grams

3. Cumin seeds – 25 grams

4. Fenugreek seeds – 25 grams

5. Mustard seeds – 25 grams

6. Turmeric powder – 50 grams

7. Garlic cloves – 10

Method for Indian recipes, curry masala, curry powder

1. Dry roast the coriander seeds, cumin seeds, fenugreek seeds and mustard seeds one by one in a heated pan.

2. Take them to various plates and cool them.

Grind the things for Indian recipes, curry powder, curry chilli powder

1. Grind the coriander seeds, cumin seeds, fenugreek seeds and mustard seeds in a blender one by one.

2. Sieve them. Keep them aside.

3. Peel the garlic cloves and crush them in a bowl with a roller pin.

Mix the powders for curry chilli powder, curry powder

1. Take dry red chilli powder, coriander seeds powder, fenugreek seeds powder, mustard seeds powder, cumin seeds powder and turmeric powder.

2. Mix them well and sieve them again to get a fine powder.

3. Add crushed garlic cloves to the mixture and mix them well.

4. Then transfer them to a clean glass jar.

Use 1 – 2 table spoons for curries. This powder give good taste to the curries.

Notes for curry masala

1. Fresh ingredients should be used for good taste.

2. Do not burn it while it is cooking.

3. The quantity of ingredients can be changed according to your taste and opinion.
