CURRY CHILLI POWDER OR KARAM

Ingredients for mixed red chilli powder or karam or koorakaram or chilli powder or mirch recipe

1. Red chilli powder – 1 kg.

2. Mustard seeds – 100 grams.

3. Coriander seeds – 100 grams.

4. Cumin seeds – 100 grams.

5. Fenugreek seeds – 100 grams.

6. Garlic cloves – 30 – 40

7. Turmeric powder – 200 grams.

Method of preparation for mixed red chilli powder or karam or koorakaram or chilli powder or mirch powder recipe

1. Take red chilli powder, mustard seeds, coriander seeds, cumin seeds and fenugreek seeds in various plates.

2. Put them in hot sun light for 6 – 8 hours or up to they get really crisp.

3. Keep the garlic cloves in sun light for 3 – 4 hours.

Roast the seeds for mixed red chilli powder or karam or koorakaram or chilli powder or mirch powder recipe

1. Place a pan on stove and heat the pan add mustard seeds to it and dry roast them ( without oil ) on medium flame.

2. Stir them well till they splutter completely or until the raw smell of them disappears or they turn crisp.

3. Then transfer the mustard seeds into a plate and allow them to cool.

2. Then add coriander seeds to the same pan and dry roast them well on medium flame.

4. Stir them well till they do not smash or until they turn crisp and the raw smell of them leaves.

5. Then transfer the coriander seeds to another plate and allow them to cool.

6. In the same way dry roast the cumin seeds and fenugreek seeds one by one in the same pan on medium flame.

7. Roast them till they turn crisp and transfer them to another plates and allow them to cool.

Grind the seeds for mixed red chilli powder or karam or koorakaram or chilli powder or mirch powder recipe

1. Then grind the dry roasted and cooled coriander seeds, cumin seeds, fenugreek seeds and mustard seeds to smooth powders one by one by a mixer – grinder.

2. Shift these four powders to some other plates separately ( one by one ) by a sieve to get smooth powders.

3. Peel the garlic leaves. Take garlic cloves into a small bowl and crush them coarsely using roller pin. Keep this aside.

3. Pour the red chilli powder, mustard seeds powder, cumin seeds powder, coriander seeds powder, fenugreek seeds powder and turmeric powder into a wide plate.

4. Mix all these items well and then shift them to an another plate through a sieve to get very smooth powder.

5. Then add crushed garlic and mix them well. Store this mixed chilli powder in an air tight glass bottle or container.

1. Take 200 grams of mixed red chilli powder to a small bottle from big bottle.

2. Then use the mixed red chilli powder or karam or koorakaram in curries.

3. Dry them under hot sun light for three days or until the red chillies get really crisp.

1. Take red chilli powder, mustard seeds, coriander seeds, cumin seeds and fenugreek seeds in various plates. Put them under hot sun light for 6 – 8 hours or up to they get really crisp. Keep the garlic cloves in sun light for 3 – 4 hours.

2. Roast the mustard seeds, cumin seeds, coriander seeds and fenugreek seeds separately ( one by one ) in heated pan on a medium flame. Roast them until the raw smell of them disappears or they turn crisp.

3. Then cool and grind these four items to smooth powders using mixer – grinder separately.

4. Peel the garlic cloves. Take garlic cloves into a small bowl and crush them coarsely using roller pin. Keep this aside.

5. Pour the red chilli powder, mustard powder, cumin powder, coriander powder, fenugreek powder and turmeric powder into a wide plate.

6. Mix all these items well and then shift them to an another plate by a sieve to get very smooth powder.

7. Then add garlic and mix them well. Store this mixed red chilli powder in a air tight glass bottle or container.

Now mixed red chilli powder is ready to use in making curries.

Dry red chillies without stalks – l kilogram

1. Remove the stalks of dry red chillies and put under sun light until they really crisp.

2. Put the coriander seeds, cumin seeds, fenugreek seeds and mustard seeds under sun light till they crisp.

3. Roast the coriander seeds, cumin seeds, fenugreek seeds and mustard seeds in a pan till they crisp or the raw smell disappears.

4. Grind the red chillies and other ingredients except garlic cloves to a fine powder in a grinding mill.

5. Shift the mixture to an another plate by a sieve to get a smooth powder.

6. Peel the garlic cloves, crush them to a coarse paste and add to the mixed chili powder and mix them well.

7. When the powder is cooled down, store it in an air tight glass bottle.

8. Take a little quantity of the powder to a small bottle and use it in curries.

Notes for mixed red chili powder or chilli powder or mirch powder:-

1. You must use fresh ingredients.

2. Put the ingredients in hot sun light for 5 – 6 hours.

3. Do not smash the ingredients while they are roasting.

4. Put the garlic cloves also in sun light for two hours.

5. Take care in making the mixed chilli powder, away from the water or wet places. Use sun dry bowls also.

6. Store the mixed red chilli powder or karam or koorakaram in a dry air tight glass container.

7. Put the red chilli powder in hot sun light for three days.

8. In making mixed chilli powder, it is better to use red chilli powder than dry red chillies.

9. Don’t store the red chilli powder when it is in hot condition.

10. The red chilli powder is cooled down completely and then store.

11. In this preparation, the quantity of the ingredients can be changed according to your taste and opinion.

If you like add 100 grams of dry roasted poppy seeds powder to the mixed red chilli powder and mix them well. This also give good taste to the curries.
